Homemade walnut butter

Ingredients

2 cups raw walnuts
A pinch of salt

Preparation

Place walnuts in a food processor and process until the nut butter takes the shape of a ball, usually about 10-12 minutes. You will have to scrape down the sides of the food processor several times. Then mix in the salt or other seasonings to taste. Pulse the nut butter until the desired consistency is reached. Use as a spread on apples or as a dip for carrots and celery.

Tips

  • For added creaminess, add a few tablespoons of oil while processing, such as nut oil or flaxseed oil.
  • Enhance sweetness with cacao powder, a drizzle of honey or maple syrup.
  • Keep homemade walnut butter in a sealed jar or air-tight container, and store in the refrigerator to prevent spoilage.
  • Soak and dehydrate the walnuts before blending to reduce bitterness.
  • Stir in finely chopped walnuts to the finished nut butter for a chunkier texture.
