1 bunch broccoli, chopped
1 head cauliflower, chopped
1 medium red onion, chopped
1 cup sunflower seeds, lightly salted or unsalted
6 strips cooked turkey bacon, crumbled
1 cup raisins, currants or other dried fruit
1 1/2 cups Veganaise (gluten, dairy, egg-free mayonnaise) or olive oil-based mayonnaise
1 Tbsp. red wine vinegar or apple cider vinegar
2-3 Tbsp. natural sweetener (organic blue agave, raw honey, pure maple syrup) or 1/4 - 1/2 tsp. Stevia (powder) or 5-7 drops Stevia (liquid)
- Chop all salad ingredients and place in a large bowl.
- Mix dressing ingredients well and pour over salad.
- Serve immediately or chill and serve. This recipe holds well for 24 hours before serving. If served 24-hours after preparing, you may want to withhold the sunflower seeds and/or dried fruit for maximum freshness.
