Warm Freekeh Breakfast Bowl with Cherries and Cashew Butter

An excellent alternative to oatmeal, this low-fat, heart-healthy ancient grain fills you up with fiber and protein.
1 cup freekeh, rinsed
2 cups water
2 Tbsp. cashew butter (or alternative nut butter)
1 Tbsp. honey
12 fresh cherries, pitted and quartered
1/2 cup plain, low-fat Greek yogurt
1 tsp. cocoa powder, unsweetened
Place rinsed freekeh and water in a small saucepan over medium heat. Bring to a boil then reduce to a simmer and cook approximately 20-25 minutes until the grain is soft but chewy. There should be 1-2 Tbsp. of cooking liquid remaining.
While the cereal is still hot, stir in the honey and cashew butter until incorporated. Fold in cherries.
Divide into 4 small serving bowls and top with Greek yogurt and cocoa. Serve warm or chill for 30 minutes for a refreshing cold breakfast.
