Tossed Salad with Sesame Ginger Dressing



4 cups mixed greens

1 small sweet onion, sliced

3 carrots, grated or chopped

2 celery ribs, chopped

1/2 cup almonds


1/4 cup sesame seeds, lightly toasted

1/4 cup extra virgin olive oil

3 Tbsp. brown rice vinegar or coconut vinegar

1 - 2 Tbsp. tamari or soy sauce or coconut aminos

1 Tbsp. toasted sesame oil

2 Tbsp. chopped celery

1-inch piece of fresh ginger, peeled

1 - 2 cloves garlic


Place salad ingredients in a large bowl. Add dressing ingredients to a blender and blend on high until smooth or to desired consistency. Dress salad and enjoy!
