Fruit Cobb Salad with Honey Yogurt Dressing

15 oz. fresh cantaloupe, peeled, seeded and diced

12 oz. fresh oranges, peeled, seeded and diced

12 oz. fresh kiwi, peeled and cut

10 1/2 oz. fresh pineapple, peeled, cored and diced

9 oz. fresh strawberries, stems removed and diced

1 1/2 oz. blue cheese crumbles

1/2 oz. toasted pine nuts

12 oz. romaine lettuce, shredded

6 oz. fresh lettuce mix

For the dressing

4 3/4 oz. nonfat, plain yogurt

1 1/8 oz. honey

1 Tbsp. plus 1 1/2 tsp. lime juice

1/8 tsp. curry powder


Prepare the dressing. Combine all ingredients. Whisk until well blended.

For one serving, place 3 oz. of each greens mix and 1 oz. dressing in a bowl. Toss to coat. Place the following clockwise on top of salad: 2 1/2 oz. cantaloupe, 2 oz. oranges, 2 oz. kiwi, 1 3/4 oz. pineapple, 1 1/2 oz. strawberries, 1 Tbsp. cheese, 1 tsp. pine nuts.
