Green Beans
In recognition of the Christmas and New Year’s holidays, some of The University of Kansas Health System’s offices will have modified hours on Thursday, December 25, and Thursday, January 1.
1 1/4 lbs. fresh green beans, trimmed
1 Tbsp. olive oil
1 garlic clove, minced
3/4 lb. Roma tomatoes
1/2 tsp. salt
1/4 cup water
1/3 cup fresh basil, chopped
1/4 tsp. freshly ground black pepper
1/4 tsp. ground red pepper
Heat olive oil in pan over medium-high heat. Add garlic. Sauté 30 seconds, stirring constantly. Add salt and beans. Sauté 1 minute. Add 1/4 cup water. Cover and cook 5 minutes till beans are crisp-tender. Add basil and tomatoes. Cover, reduce heat and cook 4 minutes until tomatoes begin to soften, stirring occasionally. Stir in peppers.
