Ingredients
1 lb. soft tofu, diced into 1 inch pieces
1 cup low-fat milk
1/3 cup low-fat sour cream
10 oz. cheddar cheese, grated
1 lb. shells or elbow macaroni
2 Tbsp. unsalted butter
1 tsp. hot sauce
Directions
Place tofu, milk, sour cream and cheese in a blender or food processor. Blend until very smooth, adding a bit more milk if necessary. The sauce may appear grainy at this point, but that will smooth out when it's cooked. Add the macaroni to boiling, salted water and cook until tender. Drain, add butter and set aside. Add the sauce directly to the warm pasta and return to the stove over low to medium-low heat. Stir constantly until the cheese has completely melted. Add the hot sauce to taste. Serve while warm.
