Roasted Mushroom and Smoky Mozzarella Quesadilla


2 cups button mushrooms, cleaned and sliced

1 small Spanish or yellow onion

2 Tbsp. olive oil

1/4 tsp. salt

1/2 cup red bell pepper, diced

1/2 tsp. cumin

1 cup low-fat smoked mozzarella cheese, shredded

6 large whole-grain, fat-free tortillas 


In a medium bowl, toss the first six ingredients. Place mushroom mixture in the center of a 15 inch sheet of foil and create a pouch by bringing together and folding the sides of the foil. Roast mushrooms in the foil pouch on the grill. Or use a baking dish in an oven to roast at 450°F. Roast about 15-20 minutes, until mushrooms are soft and fragrant. Lay out 3 tortillas, dividing cheese evenly on top. Add mushroom mixture to each tortilla. Top with remaining tortillas and grill until cheese is melted. Cut each tortilla round into 8 pieces and serve with your favorite low-fat salsa.
