Turkey Spinach Meatloaf


1 1/2-2 lb. ground turkey

1 10 oz. package frozen spinach, thawed and drained

4-5 mushrooms, chopped

1 onion, chopped

2 cloves garlic, minced

2 Tbsp. extra-virgin olive oil

1/4 tsp. salt

1/4 tsp. pepper

1 Tbsp. dried basil*

1 Tbsp. dried parsley*

1 Tbsp. dried oregano*

1/2 - 1 cup spaghetti sauce, divided

*Or, 3 Tbsp. Italian seasoning


Heat oven to 350°F. In a skillet, sauté onions, garlic and mushrooms in olive oil; set aside and let cool. Mix onions, garlic and mushrooms with spices, thawed and drained spinach and 1/4-1/2 cup spaghetti sauce. Combine with turkey. Place mixture in greased loaf pan and place in pre-heated oven. Bake, covered for one hour. Halfway through cooking, spoon the remaining spaghetti sauce on top of the loaf and put it back in the oven, covered. Remove from oven, cut, serve and enjoy!
