Quinoa and Black Bean Salad

Quinoa and black bean saladIngredients

2 cups uncooked quinoa
3½ cups water
Pinch of sea salt
1 cup chopped cilantro
5 green onions, sliced
1 small red bell pepper, diced
2 cups cooked black beans
¾ cups mango, diced (use fresh or thawed frozen mango)

¼ cup extra virgin olive oil
½ cup fresh lime juice
1 tsp. ground cumin
⅛ tsp. cayenne pepper
1½ tsp. sea salt


Rinse quinoa in fine mesh strainer under warm water. Place in medium pot with water and a pinch of sea salt. Bring to boil, reduce heat to low, cover and simmer about 20 minutes or until all liquid is absorbed. Remove cooked quinoa from pot and place in a large bowl to cool.

For the dressing, combine olive oil, lime juice, cumin, cayenne pepper and sea salt in small bowl. Whisk together and pour over cooled quinoa. Toss well with a fork.

Add cilantro, green onions, peppers, mango and black beans. Toss again and serve.
